Green Sauce Pasta

 
 

Ingredients:

1 bunch dinosaur kale, destemmed and cut into large, 2 inch pieces

3 cloves garlic

½ cup your favorite vegan parmesan (I used the Violife brand)

1 tablespoon olive oil 

1 lb pasta (any size will work)

Instructions:

Bring a large pot of water to a boil. Once the water is boiling, add the kale and garlic to the boiling water. Cook until the kale is slightly wilted and garlic is a bit soft. About 2-3 minutes. Remove from the pot and set aside in a small bowl. 

Next, add the pasta to the water and cook for as long as the package suggests. Make sure to save about ½ cup of pasta water!  Once done, put the pasta back in the empty pot off the heat. 

While the pasta cooks, add the kale, garlic, parmesan, olive oil, and reserved pasta water to a blender. Blend until smooth. 

Next add the kale sauce to the pasta and mix until well combined. Serve immediately.
