Marinated Chickpeas

Ingredients:

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 1/2 tablespoon dried oregano

  • 1/2 tablespoon dried basil

  • 2 cloves garlic, chopped

  • Ground black pepper, to taste

  • Red chili flakes (optional)

  • Salt, to taste

  • 1 can chickpeas, drained and rinsed

Instructions:

  1. In a medium-sized mixing bowl, add olive oil, apple cider vinegar, dried basil, dried oregano, garlic, black pepper, red chili flakes, and salt. Whisk until well combined.

  2.  Next, add chickpeas to the marinade and mix until chickpeas are coated evenly. 

  3. Cover and let sit in the refrigerator for 30 minutes or up to 5 days.


Serving Suggestions:

  • Serve as a component to a grain bowl or salad.

  • Can be great as a snack on toast with a sprinkle of feta.
