Miso Roasted Veggies

Ingredients:

  • 3 medium sized carrots, peeled and cut on diagonal

  • 1 head of Broccoli, cut into florets

  • 1 and a half tablespoons of miso

  • 1 and a half tablespoons of Soy sauce 

  • 1 tablespoon of rice vinegar

  • 1 tablespoon of Maple syrup 

  • 1 tablespoon of olive oil

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit. Place cut carrots and broccoli in a large bowl.

  2.  In a separate smaller bowl add miso, soy sauce, vinegar, maple syrup, and olive oil. Stir until well combined.

  3. Next, add miso mixture to the bowl of veggies and mix until well coated. Place veggies on a sheet pan lined with foil. Cook for 20 minutes or until veggies are golden brown and somewhat crisp. 

Serving Suggestions:

  • These veggies can be served as a simple side dish that could go great with a warming bowl of ramen or gyoza.

  • Make it into a full meal, by serving it over rice with a runny egg or stir fried tofu.
