Ginger Soy Glazed Carrots

 

Ingredients:

4 large carrots, peeled, and cut into ½ inch chunks on a diagonal

2 tablespoons vegan butter

1 tablespoon soy sauce 

1 ½ inch knob ginger, peeled and minced

1 tsp Sesame oil 

1 tablespoon brown sugar

Cilantro for garnish

Instructions:

Preheat the oven to 400 degrees fahrenheit.

In a small saucepan, heat the vegan butter, soy sauce, ginger, sesame oil, and brown sugar or medium low heat. Cook until the mixture reduces by about half. You want it to be almost syrupy but still very pourable.

Once the butter mixture is cooked, mix it with the carrots in a large mixing bowl. Mix until the carrots are completely covered. Place the carrot mixture out on a lined sheet pan and cook for about 20 minutes, or until the carrots are tender and caramelized. Once the carrots are cooked, transfer them to a serving platter and garnish with cilantro.
