Marinated Greek Potatoes

 

Ingredients:

4 medium yukon gold potatoes, cleaned and cut into wedges

¼ cup lemon juice

1 tablespoon oregano

5 cloves garlic, minced

1 tablespoons thyme 

½ tablespoon red chili flakes

1 tablespoon olive oil

Pinch of salt

Instructions:

Add the lemon juice, oregano, garlic, thyme, red chili flakes, olive oil and salt to a large mixing bowl. Whisk vigorously until emulsified. 

Next, add the potato wedges and mix until the potatoes are completely covered. Cover and let sit in the fridge for at least 4 hours or overnight. 

Once the potatoes are done marinating, Preheat your oven to 400 degrees fahrenheit. Lay out the potatoes on a foil covered baking sheet. Bake for about 40-45 minutes or until the potatoes are golden brown and tender.
