Instant Pot Cilantro Lime Rice
Ingredients:
1/2 tablespoon neutral oil
½ yellow onion, diced
1 cup long grain rice (I used basmati)
1 cup water
1 lime, juiced
½ cup cilantro, chopped
Instructions:
Set your instant pot to the “Saute” setting. Once hot, add the oil and onion. Sauté until the onions are translucent, about 5 minutes. Once the onions are translucent, turn the “Saute” setting off.
Next, add the rice and water. Stir to mix the onions with the rice. Ensure that all rice is under the water. Close the top and set the pressure time for 12 minutes. After 12 minutes, let it naturally release for 10 minutes. After 10 minutes, release the pressure valve. Be very careful - there could still be some pressure built up.
Next, fluff the rice and add the lime juice and cilantro. Stir until well combined. Serve immediately.

Serve with roasted veggies, quesadillas, tacos, or as a base of a taco bowl.
