Greek Quinoa Salad

Ingredients:

2 cloves garlic, chopped

¼ cup olive oil 

1 1/2 tablespoon lemon juice

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup parsley, chopped

½ cup olives, sliced

1 cup quinoa, cooked 

Vegan feta, to taste

Method:

In a large bowl, place garlic, olive oil, lemon juice, salt, and pepper. Whisk until emulsified. 

Next, add tomatoes, parsley, olives, quinoa, and feta. Mix until well combined.
