Sundried Tomato Pasta

Ingredients:

  • 1 lb Whole wheat spaghetti

  • 1 tablespoon olive oil

  • 2 cloves garlic

  • ¼ cup sundried tomatoes

  • 1 can white beans, drained and rinsed

  • 2 cups spinach (or any leafy green)

  • Black pepper, to taste

  • Vegan parmesan  (My favorite is Violife brand)

  • Salt, to taste

Instructions:

  1. Bring a large pot of water to boil. Once boiled cook the pasta for the amount of time specified on the box. 

  2. Meanwhile, in a large skillet, heat olive oil on medium heat. Once the pan is warm, add garlic and sundried tomatoes. Saute for 2-4 minutes or until fragrant. 

  3. Next, add the white beans and spinach. Saute for another 2-4 minutes until the white beans are warmed through and the spinach is slightly wilted. 

  4. Next add the cooked pasta to the sundried tomato and bean mixture. Stir until well combined. 

  5. Serve as is, or top with vegan parmesan
